The different brewing processes
The ideal extraction time is crucial to achieving an optimum result. The contact time between the water and the ground coffee needs to be long enough to extract the aroma compounds from the coffee but short enough to avoid removing the bitter substances and tannins.
That's why, in addition to the standard brewing process, JURA has developed the Pulse Extraction Process (P.E.P.®) for short specialities like ristretto or espresso and the One-Touch Lungo function for long specialities. For the preparation of cold brew specialities using the espresso method, there is also the cold extraction process.
